Avocado Omelet

I am being asked quite a lot: what do you eat for dinner?

So, this is a dish I eat for dinner quite often, or as I call dinner: second meal/third meal

So for the avocado season I want to share with you a simple and delicious recipe.

I usually prepare the avocado omelet as my last meal of the day, before a balanced and calm night, without unexpected spikes in blood sugar and without unexpected drops in blood sugar levels.

3 Organic eggs.

2 spoons of 38% cream (not mandatory but it is greatly refining the taste).

A tablespoon and a half of butter.

1/4 cup grated parmesan cheese.

1 ripe and fresh avocado, peeled and cut into slices.

Place the butter on a warm pan and heat over medium heat. Break the eggs into the pan, add the cream and mix them all while cooking (mix with a wooden spoon, not silicone or plastic). Cook the eggs while stirring until the top is almost done.

Sprinkle the parmesan over the cooked half of the omelet and fold. Slide the cooked omelet from the pan to the plate using the wooden spoon. On top of the cooked omelet, season to your taste with high-quality sea salt.

Serving suggestion: serve alongside good, fat cream cheese with a little sea salt on top.

*You can add eggs and increase the ratio of other ingredients, depending on how hungry you are (or on the amount of people smelled the omelet and demanded a portion too 🙂 ).
